Über Felipe
I am Chilean, born and raised in Santiago, a Mediterranean land of wine, cheese, and the best fruits and vegetables. Thanks to my grandmother and mother, both passionate cooks, I developed a deep love for cooking. Living for over 10 years in Valdivia, near the coast, allowed me to explore fresh seafood flavors and enjoy the most authentic pleasures of the palate. As a senior freelance designer and musician, I have traveled across Chile with my projects, discovering and collecting unique recipes from this long and amazing land full of flavors. Chile is, among many things, a country of tastes to discover.

In my Chilean cooking classes, you will have a complete experience. You will not only learn to make traditional dishes like Empanadas and Cazuela, and modern versions of our cuisine, but also enjoy brief lessons on official and popular history that bring each recipe to life. If you're learning Spanish, it will be the perfect opportunity to practice while we cook and talk. Also, if you plan to travel to Chile, I can share the best places to visit thanks to my experience in different cities. To top it off, we will explore traditional and urban myths and legends that will enrich your connection to Chilean culture. - Empanadas de Pino y Queso: Traditional Chilean meat or cheese-filled pastries. - Cazuela: A comforting soup with meat, vegetables, and hearty broth. - Cancato: Grilled fish stuffed with sausage, tomato, and cheese—a classic from the south. - Charquicán: A flavorful beef and vegetable stew with a touch of history. - Pulmay: A seafood and meat stew, rich in tradition and flavor from southern Chile. - Empanadas de Mariscos: Crispy pastries filled with seafood, perfect for lovers of the ocean’s bounty. - Completos!: Chilean-style hot dogs topped with avocado, tomato, and mayo. - Chacarero: A refreshing beef sandwich with green beans, tomato, and chili. - Lomito: A tender pork sandwich with sauerkraut, tomato, and avocado. - Barros Luco: A simple yet satisfying steak and melted cheese sandwich. - Chemilico: Steak topped with fried eggs and caramelized onions. - Mechada: A juicy, braised beef sandwich with rich tomato sauce. - Sopaipillas: Fried dough, usually served with a spicy sauce or sweet syrup. - Paila Marina: A seafood stew with fish, shellfish, and vegetables, served in a clay pot. You can choose any of these dishes for each class to tailor the experience to your taste and culinary interests!
